      🍎 Baked Apple-Cinnamon Oat Cups (Breakfast on the Go!)

      Girl, if mornings feel rushed or blah, these little oat cups are about to be your holy grail. Naturally sweet, filling, and totally portable—no more skipping breakfast! They're also freezer-friendly and kid-approved. And they’ll make your kitchen smell like joy.

      📝 Ingredients

      For Roasted Veggies

      (Yields 6 muffin-sized oat cups)

      • 1½ cups rolled oats (gluten-free if needed)

      • ½ tsp cinnamon
      • ¼ tsp nutmeg
      • 1 tsp baking powder
      • Pinch of sea salt
      • 1 medium apple, diced (skin on or off—your call)
      • 1 ripe banana, mashed (natural sweetness!)
      • 1 egg (or flax egg for vegan version)
      • 1 cup unsweetened almond milk or oat milk
      • 1 tsp vanilla extract
      • Optional: 2 tbsp chopped walnuts or pecans
      • Optional: 1 tbsp maple syrup or date syrup if you want it sweeter

      🔥 Instructions

      Step 1: Preheat & Mix

      1. Preheat oven or toaster oven to 375°F.
      2. In a large bowl, mix oats, cinnamon, nutmeg, baking powder, and salt.
      3. In another bowl, mash banana and whisk in egg, milk, and vanilla.
      4. Combine wet and dry mixtures. Fold in apples and nuts (if using).

      Step 2: Fill & Bake

      1. Grease or line a muffin tin. Fill each cup with the mixture (it’s okay if it’s liquidy).
      2. Bake for 25–30 minutes or until the tops are golden and firm to the touch.worth it).

      Step 3: Serve Warm or Store

      1. Let cool slightly, then enjoy warm—or let them cool completely and store in fridge for up to 5 days or freeze for busy mornings.
