🍽️ Recipe: Elevated Veggie Power Scramble

🛒 Ingredients

2–3 eggs

½ cup fresh spinach
¼ cup diced bell peppers
¼ cup mushrooms (sliced)
2 tbsp feta cheese
1 tbsp olive oil
Garlic powder, black pepper, sea salt
Optional: sliced avocado on the side


  • 👩🏽‍🍳 Instructions
  1. Heat olive oil in a skillet over medium heat.
  2. Sauté mushrooms and peppers until softened.
  3. Add spinach and cook until wilted.
  4. Whisk eggs and pour into skillet, gently scrambling with veggies.
  5. Sprinkle feta cheese on top and season.
  6. Serve warm with avocado if desired.
