🌿 Air-Fried Lemon Herb Salmon with Garlic Greens

This simple recipe is perfect for dinner or lunch prep, and it’s one of my go-tos when I want to feel light, fresh, and powerful. Packed with omega-3s and greens, this dish is a holy trifecta of nourishment, taste, and soul care.

📝 Ingredients

For the Salmon

  • 2 salmon fillets (wild-caught preferred)
  • 1 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp lemon zest
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • ½ tsp sea salt
  • ¼ tsp cracked black pepper

For the Garlic Greens

  • 2 cups fresh spinach or kale (washed and stemmed)
    1 tbsp olive oil or avocado oil
  • 2 garlic cloves, minced
  • Pinch of sea salt
  • Optional: squeeze of lemon juice or red pepper flakes for kick

🔥 Instructions

Step 1: Prep the Salmon

  1. Pat salmon fillets dry. Drizzle with olive oil, lemon juice, and sprinkle with lemon zest.

  2. In a small bowl, mix parsley, garlic powder, salt, and pepper. Rub onto salmon evenly.

Step 2: Air Fry It

  1. Preheat your air fryer to 400°F for 3 minutes.

  2. Place salmon skin-side down in the air fryer basket (line it if you want less cleanup).

  3. Air fry for 8-10 minutes or until cooked through and golden on top.

Step 3: Sauté the Greens

  1. While salmon is cooking, heat oil in a skillet over medium.

  2. Add garlic and sauté 30 seconds. Toss in your greens and stir gently until just wilted (about 2-3 minutes).

  3. Season with sea salt and lemon if desired.

Step 4: Plate with Purpose

  1. Plate your salmon on a bed of garlic greens. Drizzle leftover lemon juice if you want that extra zing.
