Okay sis, this is NOT your typical dry grilled chicken salad—no ma’am. It’s juicy, smoky, sweet, and refreshing. Plus, pineapple? That’s flavor and Vitamin C talking! This is perfect when you want something light but powerful. You’ll be glowing after this one, for real.
📝 Ingredients
For the Chicken
- 2 boneless, skinless chicken breasts (or thighs if you prefer juicy!)
- 1 tbsp olive oil
- Juice of ½ a lime
- 1 tsp garlic powder
- ½ tsp paprika
- ½ tsp sea salt
- ¼ tsp black pepper
- Optional: pinch of chili flakes for heat
For the Salad
- 2 cups mixed greens (spinach, romaine, arugula)
- ½ cup grilled pineapple slices
- ¼ red onion, thinly sliced
- ½ avocado, sliced
- 2 tbsp pumpkin seeds or chopped almonds
- Optional: fresh herbs like mint or cilantro for that WOW factor
For the Dressing
- 1 tbsp olive oil
- 1 tsp apple cider vinegar
- Juice of ½ a lime
- Dash of honey or a drop of date syrup
- Pinch of salt and pepper
🔥 Instructions
Step 1: Marinate & Grill
- Mix oil, lime juice, and seasonings in a bowl. Add chicken and coat well. Let sit for at least 15 minutes (girl, overnight is even better).
- Grill chicken on a preheated grill or grill pan for 5–6 minutes per side, until fully cooked with nice grill marks. Let rest before slicing.
- Grill pineapple slices for 2–3 minutes per side, until caramelized.
Step 2: Make That Salad
In a large bowl, toss greens, sliced onion, avocado, seeds, and grilled pineapple.
Whisk together the dressing ingredients and drizzle over the salad.
